- 1 Eggplant
- Tomato sauce
- Cheese (or non-dairy alternative)
- Onion powder
- Garlic Powder
- Slice the eggplant into 1 inch thick rounds. Grill for around 3 minutes each side, and place on a baking pan.
- Top with tomato sauce, fresh basil, garlic powder, onion powder, thinly sliced tomato, and top with feta and a sprinkle of cheese (or dairy alternative \'cheese\').
- Bake on 350 for 10 minutes, then broil for 1-2 minutes to melt the cheese.
