- 4 Cups cooked brown rice
- 1 Cup beets, grated
- 1 Cup carrots, grated
- 1 Cup almonds, toasted
- 2 Cups spinach leaves
- 1 Cup organic tempeh (or organic tofu), cubed
Top with “Glowing Goddess Dressing”
DIRECTIONS
- Cook brown rice according to package & set aside.
- Saute tempeh cubes in a skillet until slightly crispy.
- Placing cooked brown rice into a bowl, top with spinach leaves, carrots, beets, almonds and sautéed tempeh cubes.
- Drizzle Glowing Goddess dressing on top, and serve.
