INGREDIENTS
- 3/4 Cup almond milk
- 1/2 Cup almond flour
- 1/2 Cup plain rolled oats
- 1 Tsp olive oil
- 1 Tsp pure vanilla extract
- 2 Eggs (or egg substitute)
- 1/2 Tsp baking soda
- 1 Tsp baking powder
- Dash sea salt
Sauce
- 1/4 cup frozen blueberries
- 1/4 Cup frozen raspberries
DIRECTIONS
- In a small saucepan over medium heat warm the frozen blueberries & raspberries mixing with a spoon as it heats up until it forms a chunky sauce.
- Place all other ingredients in a blender and mix until it forms a smooth batter.
- Let batter sit for a few minutes to thicken. Poor 1/4 of the mix on to a hot pan, and cook over medium high until lightly bubbling.
- Flip and cook the other side until done. Repeat until you have 4 pancakes.
- Top the pancakes with the warm berry sauce and serve.
